Aguachile - Mexican Coastal Deliciousness

Aguachile - A Mexican Dish designed for Summer days, an amazing fiery breakfast & perhaps the best Hispanic hangover cure out there! Aguachile is was invented in Sinaloa, Mexico. Coastal towns in Mexico are all about quality & freshness. Low quality seafood does not fly if Aguachile is going to be done right, and approved by Mexican folklore. Will Landreth knew exactly where to go to meet quality standards & find the ingredients needed to make delicious Aguachile.


Recipe


Ingredients:


1 Avocado

1-2 Cucumbers

1-2 Serrano Pepper

2 Jalapeno Peppers

1 Garlic Clove

3-4 Limes

Radishes

1 Red Onion

Cilantro

Olive Oil

White Vinegar

Salt

1lb Shrimp


Directions:

  1. Peel & Devein Shrimp

  2. Squeeze Lime juice into a bowl. Add Shrimp. Let marinade in fridge for 2 hours.

  3. Peel, Slice & Devein Cucumbers

  4. Peel Garlic & Slice Radishes

  5. Remove Cilantro stems & Slice Red Onion

  6. Remove ends of chile peppers (optional: De Seed)

  7. Slice & dice Avocado

  8. Place Cilantro, Jalapeno, Garlic, Serrano, Olive Oil, White Vinegar & dash of Salt into blender. Blend until Smooth

  9. Now it's time to plate

  10. Build a base layer w/ tortilla chips

  11. Evenly add Shrimp. Save juice for later

  12. Add Cucumber, Red Onion & Radishes

  13. Next, Add Avocado & Blended Chile Paste

  14. Finish w/ a drizzle of lime juice & pinch of salt
